Pumpkin Recipes

In honor of fall and my love for pumpkin, I wanted to share some recipes. My goal was to make a bunch of pumpkin flavored things and then post my favorite one. Sadly I have not tried these all out, but I still wanted to share some ideas with you for the fall. I included the ingredients and the link because I always get disappointed when I  get to the recipe only to find out I do not like most of the ingredients, or do not own any of the ingredients. Feel free to make substitutions and customize it to suit you. Have a Happy Pumpkin Flavored Fall!

How to Roast Pumpkin

Do not worry it is much simpler than I thought!
All you need is a pumpkin and oil

Some recipes use canned pumpkin so you do not need to do this for all the recipes

Spicy Pumpkin Soup Recipe

Ingredients:
  • Your choice of oil
  • 1 large onion, peeled and chopped
  • 5 cloves garlic, peeled and chopped
  • 1 jalapeno, seeded and chopped
  • 1 1/2 tablespoons ground cumin
  • 1 1/2 tablespoons dried oregano
  • 1 1/2 teaspoons salt
  • 8 cups vegetable stock
  • 29 ounces can pure pumpkin puree
  • 15 ounces can white beans, drained
  • 2 tablespoons red wine vinegar
  • 2 tablespoons honey

Note: In this recipe you will be blending a hot liquid, be careful and follow the directions

Curried Pumpkin and Peas

Ingredients:
  • 2 tbsp. unsalted butter
  • 1 medium onion
  • 1 garlic clove
  • 2½ tsp. curry powder
  • ½ tsp. salt
  • ½ tsp. Freshly ground pepper
  • 2 lb. pumpkin
  • 2 medium red potatoes
  • 1½ c. low-sodium chicken broth
  • ¾ c. golden raisins
  • ¾ c. frozen baby peas
  • fresh cilantro

Chipotle Pumpkin Veggie Burgers

Ingredients:
  • 1 TBSP ground flax seed
  • 3 TBSP water
  • 1 cup cannellini beans
  • 1 cup pumpkin puree
  • 1/2 TBSP chipotle peppers in adobo sauce, chopped
  • 1 clove garlic, smashed/minced
  • 1/2 cup chopped green onion
  • 1/2 tsp garlic powder
  • 1/2 tsp salt-free Italian seasoning blend
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp red pepper flakes
  • 1 TBSP oil
  • 1.5 cups rolled oats
  • 1-2 cups salad greens and/or micro greens
  • 4 toasted buns [optional]
  • Chipotle Sauce  (Recipe on the site or you can try mine)
  • Avocado Topping (Recipe included on the site)

Note: The directions are great, more complicated, but at least you can use canned pumpkin to help make it easier for you

Pumpkin No Bake Energy Bites

Ingredients:
  • 8 oz. (about 1 packed cup) chopped dates
  • 1/4 cup honey
  • 1/4 cup pumpkin puree
  • 1 Tbsp. chia seeds or flax seeds
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/4 tsp. ground nutmeg
  • pinch of salt
  • 1 cup old-fashioned oats (dry, not cooked)
  • 1 cup toasted coconut flakes
  • 1 cup toasted pepitas (pumpkin seeds)

Banana Pumpkin Shake

Ingredients:
  • 1 banana
  • 1 cup pumpkin puree
  • ½ cup applesauce
  • ½ cup milk
  • 4 Tablespoons honey (or 2 Tablespoons brown sugar)
  • 1 teaspoon pumpkin pie spice
  •  ice for thickness
  • whipped cream & granola for garnish

Note: Shout out to Dine & Dash for the post, I don't think I every had a pumpkin flavored shake before. Feel free to personalize it with other flavors and substitutions make it your own!

Pumpkin Chipotle Pasta Sauce

Ingredients:
  • 1 tablespoon unsalted butter
  • 3 tablespoons sweet onion (minced)
  • 1 clove garlic (minced)
  • 1 cup chicken broth
  • 1 cup pumpkin purée
  • 2 chipotles in adobo (chopped)
  • 1/3 cup low-fat milk
  • 1 teaspoon ground sage
  • 3/4 teaspoon salt
  • 1/4 teaspoon ground coriander
  • 1 pinch ground cinnamon
  • 1 pinch ground nutmeg

Pumpkin Chili

Crock Pot Turkey White Bean Pumpkin Chili  
Ingredients:
  • cooking spray
  • 2 lb 99% lean ground turkey
  • 1/2 tsp olive oil
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp chili powder, to taste
  • 2 bay leaves
  • 2 tsp cumin
  • 1 tsp oregano
  • 2 (15 oz cans) white northern or navy beans, rinsed and drained
  • 15 oz can pumpkin puree
  • 4.5 oz canned chopped green chile
  • 2 cups low sodium chicken broth
  • chopped cilantro and chives for topping
  • salt and pepper to taste

Note: I love chili, easy to make, delicious to eat!
Pumpkin Chili #2
Ingredients:
  • 2 Tbsp. grapeseed oil
  • 1 large onion (15 oz.), chopped (2 cups)
  • 2 carrots (about 2 oz. each), chopped (2/3 cup)
  • 2 ribs celery (about 3 oz. each), chopped (3/4 cup)
  • 1 medium red bell pepper (about 6 oz.), seeded and chopped (3/4 cup)
  • Salt and pepper
  • 3 cloves garlic, minced (1 Tbsp.)
  • 1 medium jalapeno (about 1 1/2 oz.), seeded and minced (3 Tbsp.)
  • 2 Tbsp. chili powder
  • 2 tsp. cumin
  • 1/2 tsp. cinnamon
  • ¼ tsp. cayenne
  • 1 15-oz. can pumpkin puree
  • 1 14.5-oz. can fire-roasted diced tomatoes
  • 2 cups low-sodium vegetable broth
  • 1 15-oz. can black beans, drained and rinsed
  • 1 bay leaf
  • 1 Tbsp. lime juice

Note: I included two Chili recipes for you to get ideas about the right blend of seasonings and ingredients for you

Pumpkin Butter

Ingredients:
  • 3 1/2 cups pumpkin puree, or 1 (29 ounce) can (not pumpkin pie filling)
  • 2 tsp vanilla extract
  • 3/4 cup apple cider or juice
  • 1 cup packed brown sugar
  • 2-3 cinnamon sticks
  • 1-2 tsp pumpkin pie spice (to taste)

Overnight Pumpkin Oats

Ingredients:
  • 1/4 cup quick oats*
  • 1/2 cup unsweetened almond milk
  • 2 tbsp pumpkin butter
  • 1 tsp chia seeds
  • pinch cinnamon
  • pinch pumpkin pie spice
  • 1/4 sliced banana
Topping:
  • 1/4 cup unsweetened almond milk
  • pinch cinnamon
  • pinch pumpkin pie spice
  • 1 tbsp raw hulled pepitas (or any nut)

Note: Not an overnight oats fan? You can always jazz up your oatmeal by add canned pumpkin, cinnamon, ginger, nutmeg it is delicious and how I started to like oatmeal.

Spicy Pumpkin Hummus

Ingredients:
  • 3 cloves garlic, minced (about 1 Tbsp.)
  • 1/4 cup extra-virgin olive oil
  • 1 15-oz. can chickpeas, drained and rinsed
  • 1 cup canned pumpkin
  • 1/4 cup fresh lemon juice (from 1 large lemon)
  • 2 tablespoons tahini
  • 1 teaspoon ground cumin
  • 1 teaspoon harissa
  • 1/4 teaspoon raw honey
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon toasted pepitas
  • Pinch of paprika (optional)

Needless to say I am excited to try this!

Curried Pumpkin Soup

Ingredients:
  • 2 tablespoons avocado oil
  • 1 small yellow onion, finely chopped (1 cup)
  • 1 teaspoon salt
  • 2 tablespoons minced fresh ginger
  • 2 medium Bosc pears, peeled, cored, and chopped (about 1 3/4 cups)
  • 1 cup raw cashews
  • 2 1/2 tablespoons curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/8 teaspoon chili powder
  • 1 15-oz. can pumpkin
  • 5-5 1/2 cups low-sodium vegetable broth
  • Freshly ground black pepper and coconut yogurt, for garnish (optional)

Note: Uses a dutch oven, which means you need to be more careful when cooking if you do not have one to ensure even heating. Also, you will be blending a hot liquid in this recipe too, be careful!

I love these recipes! I can now keep on making healthy foods for my kids. I am a health-conscious mom who serves three beautiful and adorable children and a hard-working husband. I’m a fan of pumpkins because it has so many health benefits! It can boost your vision. Aside from that, it contains tryptophan which helps the body make serotonin. Serotonin helps us feel relaxed and unwind, making us sleep better at night. Pumpkins also contain fiber which lowers the risk of coronary heart disease. Thanks for sharing us these recipes!
